Recipe: How to cook Kaimati- The Most Famous Delicacy of the Kenyan Coast

Ingredients

  • 125g plain white flour
  • 125 ml milk or water
  • Oil for frying
  • 3-4 Cardamom Pod
  • 3/4 kgs sugar
  • 5ml ( 1 teaspoon) instant yeast

Method

Mix flour , yeast, and pounded cardamom seeds in a bowl

Add water or milk.

Mix a little water and beat until you pick up a piece of mixture in your fingers.

Leave to rest.

Make a syrup with sugar and flavour with cardamom. Let it cool thoroughly.

Put enough oil in a fryer for the deep frying.

Shape the mixture into tiny balls and put into boiling oil, then reduce heat.

Turn and stir until they are all golden brown.

Remove  and shaking off excess oil, then drop into the syrup.

Serve with black coffee
