For the busy Nairobian, mincemeat is one of the easiest and most delicious dishes you can make.
You can enjoy minced meat in a chapati wrap, in a samosa with spaghetti and even with rice.
Here is an easy 45 mins Masala Mince recipe courtesy of thesun.co.uk that serves four:
Ingredients
- 500g lamb mince
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2½ cm fresh ginger, peeled and chopped
- 1 tin of chopped tomatoes
- 2 green chillies, deseeded and finely chopped (optional)
- 2 tsps garam masala
- 2 handfuls freshly chopped coriander
Method:
- Heat a large non-stick frying pan and cook the mince, onion, garlic, and ginger for five to seven minutes.
- Reduce the heat, add the tomatoes, chillies, seasoning, garam masala, and half the coriander.
- Simmer, uncovered, for 30 minutes, stirring occasionally.
- Garnish with the remaining coriander and serve.
